Bitto Storico is an alpine cheese made of raw milk, produced in 12 mountain pastures of the Alpine foothills Orobie. It matures in cylindrical forms with regular diameter of 40-50 cm, height of 12.9 cm and a weight ranging from 9 to 20 kg. The production of Bitto Storico is gathered in the Casèra of maturation in Gerola Alta. Bitto Storico obtained the recognition of Slow Food.
